What is Gas Chromatography?
Gas Chromatography (GC) is a powerful, advanced scientific method used to test the purity and quality of ghee by analyzing its unique composition of fatty acids and volatile compounds. It is a reliable, scientific method for detecting adulteration based on national standards like those set by the FSSAI.
How Ghee Testing with Gas Chromatography Works
Principle: Every type of oil or fat has a unique chemical "fingerprint" or specific percentage of fatty acids. Ghee naturally contains short and medium-chain fatty acids, notably butyric acid, while cheaper vegetable oils or animal fats used for adulteration contain longer-chain fatty acids. GC exploits this difference to identify any foreign substances.
